MUTTON TAWA BHUNA MASALA

MASOOR PULAV

Soak Masoor ki dal for 5 hours approximately and then wash it and keep aside, Similarly soak basmati rice in water and wash well and keep aside. In a pressure cooker add some oil and Jeera, Pepper corns and chopped onions till light In colour, then add cloves,bay leaves, chopped tomatoes,ginger garlic paste ,salt , chopped chilli, then add the spices like haldi,chilli powder ,cumin & coriander powder,pepper powder,biryani masala powder ,garam masala and then add the masoor and rice and mix gently. Add water as per the preferred consistency. Close the cooker and let it cook upto 3 whistles. Garnish with coriander leaves. Serve hot with raita,and pickle.  

Khaman

Sieve besan,and add salt,haldi,citric acid, chilli ginger paste ,sugar (optional).  Mix well with water.Batter should be runny without any lumps. (Consistency should be free flowing) Mix it in 1 direction. Cover it for 10 mins and cook it in a steamer for approx 15 minutes till its well cooked. Add baking soda to the batter just before steaming and mix it well immediately. Insert a knife to check if its well cooked. For tempering: Add oil,  slit chillies ,mustard seeds ,curry leaves ,coriander leaves and add some water and turn off the gas once bubbles form and add this to the khaman and serve hot.  

EGG CURRY( PARSI STYLE)

 Roast grated coconut in a pan for few minutes. Once done,remove it from the heat and in the same pan add some oil and add some onions , til, full coriander seeds ,dry red kashmir chilly,,cloves,pepper balls,garlic pcs,once they turn brown upon roasting add it into the coconut and grind them well by adding some water .  In a pressure cooker add some oil and then add some cloves,curry leaves ,salt as per taste , curry paste prepared above and mix well for 5 minutes ,add some besan powder,red chilli powder,haldi,coriander powder and mix well.Add some tomatoes (chopped and grinded well ) and add in the curry . Add some potatoes,cauliflower,carrot,capsicum and then boil it upto 3 whistles and once cooked serve with plain white Jeera rice and parsi salad, and also add some lemon juice to the curry🍛  This was the veg version. CABBAGE

  RECIPE: Fry some onions in oil till it turns light in color. Add some chopped chillies, chopped potatoes, salt, ginger garlic paste, chilli powder and turmeric powder and mix well. Then add the chopped cabbage and cover with lid and let it cook on low flame.  Serve with chapati.  You can also add green peas or chopped capsicum in the cabbage while cooking as per ur choice. DAL PALAK

  Dal palak recipe.  Wash and clean spinach ( palak in Hindi). Cut it well.  Soak Moong dal(yellow) in water for 6 hours approx. Wash it well. Chop some onions and fry them in oil till it turns light in color. Add salt, ginger garlic paste. Add crushed tomatoes, chopped green chilli, red chilli powder, turmeric powder, coriander and cumin powder. Once the oil oozes add the palak and mix well for three minutes and then add the moong dal and water as required and mix well. Cook in pressure cooker for upto 5 whistle. Then give it a Tadka as per below.  For tempering (Tadka in Hindi) :Take some drops of Ghee and fry some chopped garlic & cumin seeds, red chilli powder, garam masala powder, Kashmir chilli and add it in the dal palak. Parsi Style Sali walo Potato

Recipe : Peel the potatoes and cut in circle and then slice it in straight cuts,soak them in water for some time. In a pan add some oil,then add cumin seeds,then add the potatoes draining the water away, and add along some Turmeric powder,chilli powder and garnish with coriander leaves. Cover with lid and let it cook on slow flame and add some water if needed. Serve with roti once cooked. Or u can wrap it in DOSA to have it as masala DOSA. Variation : You can also add beaten egg or scrambled egg by adding some salt and pepper in the egg ,covering with lid and letting it cook till the potatoes and eggs are well cooked .

Recipe  Add some oil in cooker and add chopped onions till it turns light in colour and then add some ginger garlic paste,add some chopped chilies and tomato paste. Mix well. Add some salt ,haldi ,chilli powder,coriander cumin powder and once the oil oozes out add the chicken liver and some pepper powder and chicken curry  masala powder. Also add some chopped potatoes . Add some water and cook upto 3 whistles. Garnish with coriander leaves and lemon juice,and served with paratha, or roti and parsi salad and sali (potato chips) .

Parsi Akoori/Akuri(Scrambled Eggs)

  Akuri is a spicy scrambled egg dish eaten in Parsi cuisine of India. Akuri is cooked until almost runny; the eggs are never overcooked. The main flavouring is fried onions and the spices used are ginger, coriander, chopped chilis, and black pepper.
