Parsi Akoori/Akuri(Scrambled Eggs)
Akuri is a spicy scrambled egg dish eaten in Parsi cuisine of India. Akuri is cooked until almost runny; the eggs are never overcooked. The main flavouring is fried onions and the spices used are ginger, coriander, chopped chilis, and black pepper. Akuri is traditionally eaten with pav or double roti. Wikipedia
RECIPE:
Ingredients
Large eggs
Salt as per taste
Black pepper powder
Red chilli powder
Coriander and Cumin powder
Clarified butter known as Ghee or Butter
Onions and Garlic , finely chopped
Fresh green chillies, chopped
Fresh ginger garlic paste
Turmeric powder
Chopped tomatoes
Coriander Leaves to garnish
Directions
In a pan add some butter. Then Add chopped onions and once it's light add chopped garlic and mix well.
Add salt, ginger garlic paste, then add chopped tomatoes and chillies . Add all the remaining spices and beat the eggs.
Cook over low heat, stirring and lifting the eggs as they begin to set on the base of the pan.
Cook until eggs are creamy, transfer to a serving plate and serve with bread chapatis or parathas.
Garnish with coriander leaves.
