Khaman


Sieve besan,and add salt,haldi,citric acid, chilli ginger paste ,sugar (optional). 

Mix well with water.Batter should be runny without any lumps. (Consistency should be free flowing)

Mix it in 1 direction. Cover it for 10 mins and cook it in a steamer for approx 15 minutes till its well cooked. Add baking soda to the batter just before steaming and mix it well immediately.

Insert a knife to check if its well cooked.

For tempering:

Add oil,  slit chillies ,mustard seeds ,curry leaves ,coriander leaves and add some water and turn off the gas once bubbles form and add this to the khaman and serve hot.
