URAD DAL

  Maash ki Dal, also known as Urad Dal, is a popular Pakistani and Indian lentil dish! Here's a simple recipe: *Ingredients:* - 1 cup split black gram (urad dal), rinsed and soaked for 30 minutes - 2 cups water - 2 tablespoons oil or ghee - 1 small onion, chopped - 2 cloves garlic, minced - 1 small ginger piece, grated - 1 medium tomato, chopped - 1 teaspoon cumin seeds - 1 teaspoon turmeric powder - 1 teaspoon red chili powder - Salt, to taste - Fresh cilantro, for garnish *Instructions:* 1. *Cook Dal:* Pressure cook the soaked urad dal with water until soft (about 4-5 whistles). 2. *Tempering:* Heat oil or ghee, add cumin seeds, and let them splutter. Add chopped onion, garlic, and ginger; sauté until onions are golden. 3. *Add Tomato:* Add chopped tomato and cook until soft. 4. *Spices:* Add turmeric, red chili powder (if using), and salt. Scrambled Eggs For Breakfast (Parsi style)

 Heat some Ghee in a nonstick pan and add the eggs .Add salt as per taste ,turmeric powder,chopped green chillies and chopped coriander leaves.Also add slight chilli powder and pepper powder if preferred and mix well . Serve with Roti or Toast or Plain Bread. (Cook the eggs as per your preferred consistency however these taste better when not over cooked )

Saucy Onion Sauce ages

Slice the chicken Sauce ages(ensuring not to make extremely thin slices) and sprinkle some chilli powder & pepper on it. In a Pan heat some oil and then add  sliced onions ,once its light in colour add some tomato ketchup and salt according to taste and then add the  sauce ages and stir gently on low flame so they don't stick to the bottom of the pan ensuring it doesn't break while stirring. Chopped chillies and coriander leaves can also be added if preferred.  Enjoy this flavourful simple and quick saucy oniony sauceages.

*Ingredients:* - 1 cup split yellow pigeon peas (toor dal) soaked for three hours  - 4 cups water - 2 tablespoons ghee or oil - 1 teaspoon cumin seeds and mustard seeds - 1  teaspoon chilli powder  - 1 small tomato, diced - 1-2 green chillies, chopped - 1 teaspoon ginger paste optional - 1 teaspoon turmeric powder, coriander powder, cumin powder & garam masala  - Salt, to taste - 1 tablespoon jaggery or sugar (adjust to taste) - 1-2 tablespoons lemon juice or tamarind paste (for tanginess) - Fresh cilantro, for garnish *Instructions:* 1. *Cook Dal:* Pressure cook the toor dal with water, turmeric, and salt until soft. Take one cup  red chori, soaked overnight and drained 1.*Pressure Cook:* In a pressure cooker, combine the soaked and drained red chori, enough water to cover them, and a pinch of salt. Cook until the beans are tender (usually 4-5 whistles). 2. *Prepare Masala:* In a pan, heat oil or ghee. Add cumin seeds and let them splutter. Add chopped onions ,green chillies and sauté until onions are golden brown. Add minced garlic and ginger paste; cook until fragrant. 3. *Add Tomatoes:* Add chopped tomatoes and cook until they soften and the mixture thickens. 4. *Spices:* Add turmeric, coriander and cumin powder ,red chili powder, garam masala, and salt. Mix well. 5. *Combine:* Add the cooked red chori to the masala mixture. Adjust consistency with water if needed.
