Khatti Meethi Gujrati Dal

*Ingredients:*

- 1 cup split yellow pigeon peas (toor dal) soaked for three hours 
- 4 cups water
- 2 tablespoons ghee or oil
- 1 teaspoon cumin seeds and mustard seeds
- 1  teaspoon chilli powder 
- 1 small tomato, diced
- 1-2 green chillies, chopped
- 1 teaspoon ginger paste optional
- 1 teaspoon turmeric powder, coriander powder, cumin powder & garam masala 
- Salt, to taste
- 1 tablespoon jaggery or sugar (adjust to taste)
- 1-2 tablespoons lemon juice or tamarind paste (for tanginess)
- Fresh cilantro, for garnish

*Instructions:*

1. *Cook Dal:* Pressure cook the toor dal with water, turmeric, and salt until soft. You can add some peanuts too for more flavour. 

2. *Tempering:* In a pan, heat ghee or oil. Add cumin seeds, mustard seeds and let them splutter. Add chopped green chilies; also u can add one to two red dried kashmiri chillies and curry leaves. Hing can also be added. 

3. *Add Tomato:* Add diced tomato and cook until soft. Add the remaining spices as mentioned above.

4. *Combine:* Add the cooked dal to the tempering mixture. Mix well.

5. *Sweet & Tangy:* Add jaggery or sugar and lemon juice or tamarind paste. Adjust sweetness and tanginess to taste.

6. *Simmer:* Let the dal simmer for 5-10 minutes.

7. *Garnish:* Garnish with fresh cilantro and serve with rice or roti.
