Chicken Biryani


Soak Basmati rice in water for an hour and wash it well it by removing the dirty water.

To cook the rice , add  it in boiling water along with Salt, Bay Leaves, Black Cardamom, Star Anise, Cinnamon sticks,  Green Cardamom, cloves, cumin seeds, and add few drops of oil. Ensure to Strain the water off well so the rice grains don't stick together once cooked. Let the rice cool down.

To prepare the Chicken: Add oil and then start by frying chopped onions and chopped green chilly (optional) till the onions turns light in color, add some cloves , bay leaves, peppercorn, cinnamon stick, black cardamom, ginger garlic paste ,salt and mix well. Then add some Turmeric powder,  chilly powder, pepper powder, coriander-cumin powder, cumin powder, and grinded tomato paste and add chopped chicken and mix well. After 5 minutes add Curd paste(mixed curd and water thick paste as adding only curd will start forming lumps) and biryani masala powder and let it cook well and add water to cook the chicken thoroughly till the gravy becomes thick. The consistency of the Gravy should be like a paste which would go along while layering the rice and the chicken(not too watery and not too dry)

Once the chicken is cooked , garnish with coriander leaves and fry some sliced onions for garnishing till they turn golden brown and also keep some mint leaves and coriander leaves ready and fry few chopped potatoes and boil eggs (Optional). 

Use  a pinch of orange- red color powder and add it in water for giving rice the desired colour. Add this to some portion of the cooked white rice by removing it separately so that all the grains don't look yellow in colour.

Layering: Grease the cooking pot with ghee ( clarified butter) and add 1 portion of cooked rice and add some portion of cooked chicken evenly and add some fried onions and mint and coriander leaves, fried potatoes and add another layer of some coloured rice by following the above steps till the rice and chicken is over and finally at the top add some boiled eggs. You can once again heat the biryani after the layering ,in order to serve it hot. Once its ready ,Serve with Raita &  ensure to mix the portions carefully so the layered portions are evenly distributed and the rice grains do not break.
