Red Chori Curry (Cowpeas)
Take one cup red chori, soaked overnight and drained
1.*Pressure Cook:* In a pressure cooker, combine the soaked and drained red chori, enough water to cover them, and a pinch of salt. Cook until the beans are tender (usually 4-5 whistles).
2. *Prepare Masala:* In a pan, heat oil or ghee. Add cumin seeds and let them splutter. Add chopped onions ,green chillies and sauté until onions are golden brown. Add minced garlic and ginger paste; cook until fragrant.
3. *Add Tomatoes:* Add chopped tomatoes and cook until they soften and the mixture thickens.
4. *Spices:* Add turmeric, coriander and cumin powder ,red chili powder, garam masala, and salt. Mix well.
5. *Combine:* Add the cooked red chori to the masala mixture. Adjust consistency with water if needed. Simmer for 10-15 minutes.
6. *Garnish:* Garnish with fresh cilantro and serve hot with rice or roti.
