Rava Halwa (Suji Halwa) Recipe
**Ingredients:**
- Semolina (Rava/Suji) – 1 cup
- Ghee – 3 tablespoons
- Sugar – 3/4 to 1 cup (adjust to taste)
- Water – 2 cups
- Milk – 1/2 cup (optional, for richer taste)
- Cardamom powder – 1/2 teaspoon
- Cashew nuts – 10-12
- Raisins – 10-12

### Instructions:
1. **Roast the Semolina:**
- Heat 2 tablespoons of ghee in a heavy-bottom pan on medium flame.
- Add the semolina and roast it, stirring continuously, until it turns golden brown and aromatic. This may take about 6-8 minutes. Be careful not to burn it.
2. **Prepare the Nuts and Raisins:**
- In a small pan, heat the remaining 1 tablespoon of ghee.
- Fry the cashew nuts until golden and then add the raisins. Fry until the raisins puff up.
- Remove and set aside.
3. **Boil Water and Milk:**
- In another saucepan, bring water and milk (if using) to a boil.
4. **Cook the Halwa:**
- Slowly add the boiling water and milk mixture to the roasted semolina while stirring continuously to avoid lumps.
- Cook on medium heat, stirring constantly until the mixture thickens.
5. **Add Sugar and Cardamom:**
- Add sugar and continue to cook and stir until the sugar dissolves and the halwa thickens to a pudding-like consistency.
- Add cardamom powder and mix well.
6. **Finish with Nuts and Ghee:**
- Add the fried cashew nuts and raisins.
- Add a little more ghee if desired for extra richness and shine.
- Stir well and cook for another 1-2 minutes.
7. **Serve:**
- Serve hot, garnished with extra nuts if you like.
