BEETROOT RAITA

 

Instructions:

Prepare Beetroot: Either use raw grated beetroot for maximum crunch, or steam/boil it until tender and let it cool completely.
Whisk Yogurt: In a bowl, whisk the yogurt until smooth.
Mix: Add the grated beetroot,roasted Cumin powder, Chaat masala and Black salt to the yogurt. Mix well.
Tempering (Tadka): In a small pan, heat 1 tsp oil. Add mustard seeds, hing, green chilies, cumin seeds and curry leaves. Let them sizzle for a few seconds.
Combine: Pour the tempering over the beetroot-yogurt mixture and mix well. Garnish with coriander leaves and serve chilled.😋
