RAGDA PATTICE

 For the Ragda:


- 1 cup dried white peas (vatana), soaked overnight and pressure cook it next day
- 2 medium onions, chopped
- 2 cloves garlic, minced
- 1 medium tomato, chopped
- 1/4 teaspoon cumin seeds
- 1/2 teaspoon cumin powder ,turmeric powder,coriander powder
- 1/2 teaspoon garam masala powder
- 1/2 teaspoon red chili powder
- Salt, to taste
- 2 tablespoons tamarind chutney
- 2 tablespoons coriander chutney
- Chopped cilantro, for garnish and some lemon juice

Instructions
For the Potato Patties:
1. Mix mashed potatoes, peas, onions, cilantro, green chilies, cumin powder, garam masala powder, and salt in a bowl. You can add more spices of Ur choice in the batter.
2. Shape into patties and coat with breadcrumbs or semolina.
3. Fry the patties until golden brown and crispy.

For the Ragda:
1. Heat oil in a pan and sauté cumin seeds, onions, and garlic until onions are translucent.
2. Add chopped tomato, coriander and cumin powder, garam masala powder, turmeric powder,red chili powder, and salt. Cook until the tomato is soft.
3. Add boiled white peas, Simmer for 10-15 minutes.

Assembly and Serving:
1. Place a few potato patties on a plate. 
2. Spoon the ragda over the patties.
3. Top with chopped onions, sev, and cilantro.
4. Serve with tamarind chutney and coriander chutney.

Tips:
U can also eat RAGDA with PUNJABI SAMOSA instead of PATTICE.
This RAGDA can also be enjoyed as it is by adding chutney ,onions coriander leaves, sev and lemon juice. 
For more flavourful RAGDA add Bay Leaves in the peas while pressure cooking it and give a tempering of ghee garlic red chilli powder and kashmir chilli and add it in the cooked RAGDA in the end...
