UPMA


Here's a simple recipe for making Upma, a popular South Indian breakfast dish:


Ingredients:
- 1 cup semolina (sooji/rava)
- 2 tbsp oil or ghee
- 1 tsp mustard seeds
- 1 tsp cumin seeds (optional) 
- 1-2 green chilies, chopped
- 8-10 curry leaves
- 1 medium onion, finely chopped
- 1/4 cup mixed vegetables (carrots, peas, bell peppers, etc.) as per choice 
- Salt to taste
- 2 cups water
- Fresh coriander leaves for garnishing
- Lemon juice (optional)

Instructions:
1. Dry roast the semolina in a pan on low heat until it turns light golden brown. Keep stirring to avoid burning. Once roasted, remove from heat and set aside.
2. In a separate pan, heat oil or ghee over medium heat. Add mustard seeds and cumin seeds. Let them splutter.
3. Add chopped green chilies and curry leaves. Saute for a minute.
4. Add chopped onions and sauté until they turn translucent.
5. Add mixed vegetables and cook for a few minutes until they are slightly tender.
6. Pour water into the pan and bring it to a boil. Add salt to taste.
7. Gradually add the roasted semolina to the boiling water while stirring continuously to avoid lumps.
8. Reduce the heat to low and cover the pan with a lid. Let it cook for 5-7 minutes or until the upma is cooked and water is absorbed.
9. Once done, fluff up the upma with a fork. Add a squeeze of lemon juice if desired.
10. Garnish with fresh coriander leaves and serve hot with chutney or pickle.
