Methi ni Bhaji par Eedu ( Eggs on Fenugreek leaves)

Here's a simple and delicious recipe for Methi Bhaji with Eedu (Fenugreek leaves with eggs) that you can try:


### Ingredients:
- 2 cups fresh fenugreek (methi) leaves, washed and chopped
- 2-3 eggs
- 1 onion, finely chopped
- 2-3 green chilies, chopped
- 1 tsp turmeric powder
- 1 tsp red chili powder
- Salt to taste
- Oil for cooking
- Fresh coriander leaves for garnishing

### Instructions:
1. **Prepare the Methi Bhaji:**
   - Heat oil in a pan and
   - Add chopped onions and green chilies. Saute until onions turn translucent.
   - Add turmeric powder and red chili powder. Mix well.
   - Add the chopped fenugreek leaves and salt. Cook until the leaves wilt and the moisture evaporates.

2. **Add Eggs:**
   - Create small wells in the methi bhaji mixture.
   - Crack open the eggs into the wells. Or u can add beaten eggs as per Ur liking.(As given in the picture)
   - Season the eggs with a pinch of salt and pepper. The same applies if adding the beaten eggs mixture.
   - Cover and cook until the eggs are cooked to your desired level of doneness. 

3. **Garnish and Serve:**
   - Garnish with fresh coriander leaves.
   - Serve the Methi Bhaji par Eedu hot with roti or bread of your choice.

Tip : 
Ensure to keep the flame on low heat so the eggs cook well and also the Bhaji dsnt burn .u can add little oil if the Bhaji looks dry before adding the eggs.
