Quick and Easy Masala Khichdi




 This is a very simple recipe and can be cooked by anyone, including a person who has never cooked anything :)

As we all know khichdi has so many variations and can be eaten even by someone who is unwell and this one being my most favourite,do give it a try and i'm sure everyone from adults to kids will enjoy it.

Not only it is quick and easy to cook but is also very healthy.



RECIPE

Soak rice, yellow moong dal, Toor Dal  for  atleast 1 hour in water and wash well.

Then in a pressure cooker add some oil and add  cumin seeds, bay leaves, cloves ,few chopped onions,greenchillies and let the onions turn light in colour. Then add some chopped potatoes, tomatoes (grinded),green peas, brinjal(optional). Mix well for 5 mintues and add some ginger garlic paste,salt,turmeric powder,red chilly powder, cumin powder, garam masala powder ,coriander powder , kitchen king masala (BADSHAH BRAND). Once the veggies start oozing out the oil add the washed toordal moongdal and rice and mix gently to avoid the rice from breaking. Add water as per the preferred consistency of rice. If you want it soft like Khichdi add more water else just add the required amount.After 3 whistles turn off the stove. Finally,Garnish with Coriander Leaves.

PS: You can add other vegetables like carrot etc  ,as per your choice . You can also fry Paneer ( cottage cheese) in ghee and add to this dish.

This can be eaten just as it is or  with Plain Curd or Raita or even Gujrati Style Kadhi, pickle and pappad.

Variation: You can add biryani masala instead of garam masala and kitchen king masala if you want to have it like a vegetable pulav types and sprinkle it with some sliced fried onions and always try to use home made ginger garlic paste as that really brings  out the best flavour in any dish.
