Bharela Baingan Recipe:

Stuffed Brinjal Recipe with Chana ka Atta:

Ingredients:
- 6-8 small brinjals (eggplants)
- 1 cup roasted chana ka atta (gram flour)
- 1/2 tsp turmeric powder
- 1 tsp red chili powder
- 1 tsp coriander powder
- 1 tsp cumin powder
- Salt to taste
- Oil for cooking
- Coriander leaves for garnishing

Instructions:

1. Wash the brinjals and make a plus (+) sign cut on the top of each brinjal. Do not cut the brinjals completely.
2. In a mixing bowl, add chana ka atta, turmeric powder, red chili powder, coriander powder, cumin powder, salt, and mix well by adding water and making a paste for stuffing in Brinjal pieces.
3. Stuff each brinjal with this mixture and keep them aside.
4. Heat oil in a pan and add mustard seeds,hing,Jeera And let it splutter and then add  ginger garlic paste then add the extra paste of the stuffed brinjals and mix well. Then add the stuffed Brinjal and Cook on low flame for 5 minutes. Ensure there are no lumps formed else the dish will get ruined, so keep monitoring and mixing well and add water if necessary to avoid it from getting burnt or remaining uncooked.
5. Add 1/4 cup of water to the pan and cover it with a lid. Cook for another 15-20 minutes on low flame until the brinjals become soft and the stuffing is cooked.
6. Once the brinjals are cooked, remove them from the pan and garnish with coriander leaves.
7. Serve hot with roti or rice.
