Veg Fried Rice
RECIPE: Soak rice in water for around 20 minutes and not more and wash it well. Boil rice and add salt as per taste. Remove the excess water and immediately spread the rice in a flat plate so it cools down faster and does not stick to each other. Usually it is advisable to prepare the rice in advance and cool it in the fridge. Basmati Sella Rice (extra long grains) are used in this recipe as they are amazing to cook dishes like fried rice and biryani because of their texture.
In a wok add few drops of oil and once it's heated quickly toss some chopped onions , garlic, ginger, spring onions whites, carrots, green capsicum, green chillies, green peas. You can also add french beans, cabbage and yellow/red capsicum. Do not overcook the vegetables, try to leave it a bit crunchy for more flavour. Then add some salt, slight ajinomoto(optional), soya sauce ,pepper powder, hot sauce, slight vinegar and stir well. Then add the cooked rice(ensure they have cooled down well )and toss them gently with the vegetables by flipping them using spatula and mixing it in just 1 direction to ensure the grains don't break. Garnish with some greens of spring onions. Fried rice are best eaten with manchurian or even enjoyed as it is.
Variation: One can also add scrambled eggs ,shrimps or shredded chicken or dry chicken Manchurian pieces for a non veg version of fried rice. You can add green chilli sauce, thai chilli sauce, ketchup and ready made fried rice masala while cooking ( if need be) and depending on your taste buds cos as mentioned above fried rice have lots of versions and every one have different preferences ...
